The Time Will Tell whiskey series includes The Sheep, a light whiskey, and The Wolf, a barrel-aged single grain wheat whiskey. Both are crafted from White Sonora wheat, one of the oldest and most sustainable wheat varieties in North America. The term "Time Will Tell" refers to the immense effort, time and variability in the process of not only making and aging the spirit, but the farmers' endeavor in growing the grain.
The Sheep and The Wolf whiskeys are single grain, single barrel spirits crafted from local Colorado growers. We partnered with Id Est to craft this original whiskey that showcases the gorgeous and delicate flavors of the wheat. Id Est's Michelin Star restaurant kitchens and bars focus on supporting regenerative agricultural ingredients, specifically by developing a closed loop system for local, heirloom grain – a perfect fit with our focus on sustainability and ethical spirits production.
The Sheep light whiskey is a silky smooth, grain-forward whiskey made from 30% raw and 70% malted White Sonora wheat. It is bright and clean on the palate with delicate fruit notes and sweetness from the grain playing a starring role. Gentle aging in a used oak barrel offers structure, depth, and just a hint of spice. Fresh cut grass and hay linger both on the finish and the nose. It is the perfect highball whiskey, crafted with a nod to grain-forward, light and bright Japanese whiskeys.

This Light Whiskey will be released on August 22, 2024. Bottles can be picked up at Dry Land Distillers anytime starting at 6 pm on the 22nd. We will hold your bottles for you for up to one year.
